Simply Collagen Blueberry Muffins

Ingredients:

1 cup all-purpose flour
1/2 cup almond flour
1/2 cup granulated sugar
2 tsp baking powder
1/2 tsp salt
2 scoops (about 20g) Simply Collagen Marine Collagen Powder
2 large eggs
1/2 cup unsweetened applesauce
1/4 cup melted coconut oil
1/2 cup almond milk (or any milk of your choice)
1 tsp vanilla extract
1 cup fresh or frozen blueberries

Instructions:

Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease the cups.


In a large mixing bowl, whisk together the all-purpose flour, almond flour, sugar, baking powder, salt, and Simply Collagen Marine Collagen Powder until well combined.


In another bowl, beat the eggs lightly. Add in the applesauce, melted coconut oil, almond milk, and vanilla extract. Mix until well combined.


Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.


Gently fold in the blueberries, being careful not to crush them too much.
Divide the batter evenly among the muffin cups, filling each about 2/3 full.


Bake in the preheated oven for 18-20 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center comes out clean.


Remove the muffin tin from the oven and allow the muffins to cool for a few minutes before transferring them to a wire rack to cool completely.
